Cooling Down: DIY Plant-Based Ice Cream and Sorbets

Summer is the perfect time to cool down with some refreshing and healthy treats. Making your own plant-based ice creams and sorbets at home is not only fun but also allows you to control the ingredients, ensuring a delicious and wholesome dessert. Best of all, you don’t need any specialized equipment like an ice cream maker. With just a few simple tools, you can create creamy, dreamy frozen delights right in your kitchen.

Ingredients and Bases

To start, let’s look at some common plant-based bases and the ingredients you’ll need:

  • Coconut Milk: Rich and creamy, perfect for ice creams.
  • Almond Milk: Lighter and great for a subtle flavor.
  • Cashew Cream: Soak cashews and blend with water for a super creamy base.
  • Summer Fruits: Strawberries, mangoes, bananas, blueberries – choose ripe, flavorful fruits for the best taste.

Essential Equipment

No ice cream maker? No problem! Here’s what you need:

  • Blender or Food Processor: For blending your ingredients smoothly.
  • Mixing Bowls: To combine your ingredients.
  • Freezer-Safe Containers: For freezing your ice cream or sorbet.
  • Fork or Hand Mixer: To occasionally stir the mixture while it freezes.

Basic Recipes

Simple Plant-Based Vanilla Ice Cream

Ingredients:

  • 1 can of full-fat coconut milk
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a mixing bowl, combine coconut milk, maple syrup, vanilla extract, and salt. Whisk until well blended.
  2. Pour the mixture into a freezer-safe container.
  3. Place the container in the freezer. After 30 minutes, stir the mixture vigorously with a fork or hand mixer to break up any ice crystals. Repeat every 30 minutes for 3-4 hours until the ice cream is creamy and smooth.
  4. Let the ice cream sit at room temperature for a few minutes before scooping.

Basic Fruit Sorbet

Ingredients:

  • 4 cups ripe fruit (e.g., strawberries, mangoes, or a mix)
  • 1/4 cup water
  • 1/4 cup maple syrup or agave nectar
  • 1 tablespoon lemon juice

Instructions:

  1. In a blender or food processor, blend the fruit, water, maple syrup, and lemon juice until smooth.
  2. Pour the mixture into a freezer-safe container.
  3. Place the container in the freezer. Stir the mixture every 30 minutes with a fork or hand mixer to prevent large ice crystals from forming. Repeat for 2-3 hours until the sorbet is smooth.
  4. Allow the sorbet to soften slightly at room temperature before serving.

Creative Flavors and Add-Ins

Creative Ice Cream Flavors:

  • Mint Chocolate Chip: Add 1/2 teaspoon of peppermint extract and 1/2 cup of vegan chocolate chips to the vanilla ice cream base.
  • Blueberry Lavender: Blend 1 cup of blueberries and 1 teaspoon of dried culinary lavender with the coconut milk base.

Unique Sorbet Combinations:

  • Watermelon Basil: Blend 4 cups of watermelon chunks with a handful of fresh basil leaves.
  • Pineapple Coconut: Blend 3 cups of pineapple chunks with 1 cup of coconut milk.

  • Mix in nuts, chocolate chunks, or fruit swirls during the initial blending stage or halfway through the freezing process for added texture and flavor.
