The holiday season is a time of joy, family, and feasting. Yet, it’s also a perfect opportunity to showcase the beauty of plant-based eating and sustainable living. Create a holiday celebration that’s delicious, festive, and kind to our planet and its inhabitants.

Plant-Based Feasting: The Heart of Your Celebration

Creating an entirely plant-based holiday feast is not just healthy; it’s also a gesture of kindness towards animals and the environment. Start with a centerpiece dish that’s both tasty and filling. Consider a classic like a savory vegan Wellington or a hearty vegetable casserole. Surround it with various side dishes – think roasted root vegetables, a vibrant kale salad, and creamy mashed potatoes made with plant-based milk and butter. Remember a rich, flavorful gravy made from vegetable stock and mushrooms.

Sustainable Decorating: Setting a Festive Scene

Ingredients:

  • 4 large potatoes, peeled and diced
  • 1/4 cup plant-based milk
  • 2 tablespoons vegan butter
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked green lentils
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup vegetable broth
  • 1 teaspoon each of thyme and rosemary

Instructions:

  1. Boil the potatoes until tender, drain, and mash with plant-based milk, vegan butter, salt, and pepper. Set aside.
  2. In a pan, heat olive oil and sauté onion and garlic until soft.
  3. Add lentils, carrots, peas, tomato paste, vegetable broth, thyme, and rosemary. Cook until the mixture thickens.
  4. Preheat your oven to 375°F (190°C).
  5. In a baking dish, layer the lentil mixture and top with the mashed potatoes.
  6. Bake for 20 minutes or until the top is golden.
  7. Serve warm and enjoy!
