  • Instructions:

    2. Add shredded jackfruit, season with salt and pepper, and cook for 5-7 minutes.
    3. Stir in BBQ sauce, reduce heat, and simmer for 15-20 minutes.

Grilled Veggie Skewers with Herb Marinade

  • Ingredients:
    • 1 red bell pepper, chopped
    • 1 yellow bell pepper, chopped
    • 1 zucchini, sliced
    • 1 red onion, quartered

Classic Potato Salad with a Vegan Twist

  • Ingredients:
    • 6 medium potatoes, peeled and cubed
    • 1 cup vegan mayonnaise
    • 1 tablespoon yellow mustard
    • 1/2 cup celery, chopped
    • 1/4 cup red onion, finely chopped

  • Ingredients:
    • 2 cups strawberries, sliced
    • 1 cup blueberries
    • 1 cup pineapple chunks
    • 1/4 cup fresh mint leaves, chopped
    • 1 tablespoon lime juice
  • Instructions:
    1. In a large bowl, combine strawberries, blueberries, pineapple, and mint.
    2. Drizzle with lime juice and toss gently to mix.
